The color and scent of the first strawberries light up the markets with the first warm days. Everyone eagerly awaits the first local strawberries, unrivalled in flavor and texture.

The Comtat Venaissin is the biggest growing area in Provence. Strawberries have been grown since the late 19th century, following major crisis periods which affected farming between 1852 and 1875. The construction of the Carpentras Canal transformed the Comtat Venaissin into a vast garden of early fruit and vegetables. The Carpentras strawberry (fraise de Carpentras) is a registered trademark. Several varieties are grown – Pajaro, ciflorette and gariguette – and are available on the markets throughout the spring. Candy makers use it to make candied strawberries, syrups, berlingots and wonderful jams.
