The black truffle

Called by many names – the black diamond, the divine root, the black Comtat pearl, the fragrant nugget, the dark beauty – including its scientific name, tuber melanosporum.

The black truffle is a product which is rare, expensive, magical and mysterious. Since time immemorial truffles have grown underground in the early days of winter in the Comtat Venaissin and along the slopes of Mont Ventoux – which is described as being white as snow on top and black with truffles at its base ….

A From mid-November to March, the black diamond gives out its powerful fragrance on the market in Carpentras, on Friday mornings, in The Hotel-Dieu.

Did you know ? the so-called “Perigord Truffle” is just a name, for every ton of truffles harvested in Perigord, 45 tons are harvests in the southeast, one-third of which in Carpentras !
